Method : Mix the minced Paua with the onion and garlic. Add the lemon and parsley. Mixture should be wet at this point. Then crack in the egg and begin to fold in the flour and milk. Your mixture should become batter like at this point. Consistency is a matter or personal preference. We favour not as runny as pancake mix, but nothing like as solid as scone mix, head for 'just dripping off the spoon' as a good starter for ten. Season with salt and pepper. Then form mini disc sized batter blobs, approximately a centimetre thick. Throw these little guys onto a well oiled hot barbie and cook briefly on both sides until browned. Serve with lemon and the salad of your choice. * for those who've not tried this at home before ... do not include the shell |
